2 - Sicily Salad




Day #2
This salad has an exquisite blend of olive oil, vinegar, and basil which makes it a delicious salad! The aroma will automatically take you to Southern Italy where the aroma of olive oil and basil fill the streets. (You'll need a knife and fork to eat this salad)

What you'll need: (For 1 serving)

5 slices red tomato
5 slices fresh mozzarella (1/2 inch thick)
1/2 red onion sliced
1 cup loosely packed basil

1 T olive oil
1 1/2 Apple cider vinegar
1/4 chopped dried mint*
salt and pepper to taste

*optional

What to do:

place one tomato, few slices of onion, slice of mozzarella, 2 pieces of basil in that order until none left.

In separate bowl, mix oil, vinegar, salt & pepper, dried mints.

drizzle mix over slices of tomato, green and cheese.
