1 - Chicken Curry Salad/Sandwich

Day #1
Ok so its only day 1 and I am already kind of cheating. This is technically a sandwich but since it has enough greens and fruits and vegtables (which is the whole mission of this goal; to eat more greens) it is also a salad. This Salad/Sandiwch is nonetheless an amazingly tasty sandwich. It is not spicy at all, the apples and celery inside give it a crunchy sweet edge combined with the rest of the ingredients make it DeliCIOUS!
What you'll need:
1/3 cup half walnuts
3 cups shredded rotiserie chicken (I usually buy mine from the supermarket)or 3 cups diced chicken breast
salt & pepper to taste
3 tablespoons unsalted butter
2/3 cup mayonnaise, plus extra for spreading
1/3 cup diced celery
1 small green apple, peeled, cored and diced
2 teaspoons fresh lemon juice
2 teaspoons curry powder
Sliced bread (the coarser the bread the better, I used regular white sliced bread and toasted it)
lightly packed mixed baby lettuces for sandwich
What to do:
Preheat an oven to 350 degrees. Toast walnuts on baking sheet until lightly golden and fragrant, about 5 minutes.
Remove from the oven and set aside.
If using chicken breasts, season the chicken breasts with the salt and pepper. In a frying pan over high heat, melt the butter. Add the chicken and saute
until golden brown, turn over cook until other side is golden brown and cooked through.
If using rotisserie chicken while it is still hot you can skip this. If using rotisserie chicken from your fridge, warm it up by frying it on frying pan using unsalted butter. Transfer to a plate to cool completely.
Place chicken in a bowl with any accumulated juices.
Add the 2/3 cup mayonnaise, the apple, celery, walnuts, lemon juice
and curry powder. Stir to mix well. Cover and refrigerate until
completely chilled, about an hour.
Toast bread if desired. Spread some mayonaise on bread (if you want to cut the weight either skip this step or use light mayo) Put chicken on one side and baby greens on second side and voila! (this makes enough for 4 - 5 sandwiches depending on how much you pack the sandwich. I refrigirated mine in the past and had it for lunch the next day or a light snack)
First day of going green accomplished!

I've made a delayed new years resolution, a salad a day. I'm old enough to know that I should be eating greens and fruits but I disregard that and continue my life not eating enough of what I should.
It was not until my husband and I started thinking about children that I began to comprehend the idea of another human being relying on me for vitamins and health. I decided to get my act together and made a vow to myself (and the doctor) that I would eat at least a salad a day. I am not trying to lose weight (the dressings on some of these salads definetly do not aid in losing weight...although if you did want to lose weight some ingredients can be adjusted to make that happen) I am just trying to fill my body with healthy greens and proper vitamins.
I am going to take baby steps and aim to keep this up for 2 months. The idea of making such a dramatic change in my diet "forever" or "from now on" is just lying to myself. I am going to take it 2 months at a time.
Let's all join together and fight against the junk thats oh so very enticing and eat just a salad a day.
